Pork Carnitas- Low- Carb, Naturally!


I had some leftover pork roast, made Ree Drummond style. I used one can of chipotle peppers instead of two, though, and it was spicy enough. To the peppers you add 20 oz of Dr. Pepper, an onion, and salt and pepper to taste. Slow cook at 300 degrees f., and in about 4-5 hours, depending on the size of the roast, a magically delicious starter of many a great meal is born!

Well, carnitas are really easy. You simply put that pulled pork into a tortilla and add all the usual suspects. I used chipotle salsa, and cilantro and reheated the meat in a skillet. Then I browned a low-carb tortilla that I loaded with Mexican cheese and plated that. I added avocado, more salsa, sour cream and shredded lettuce, and called it GOOD. It was pretty easy, too. The extra good news is that I have plenty of the tuna casserole from last night waiting for me in the fridge. Sounds like my lunch tomorrow after I work out. Breakfast? I am planning on a fruit and whey protein smoothie with almond milk. ( unsweetened vanilla). It’s all working out very well.
